Serves 4
INGREDIENTS:
2 tablespoons balsamic vinegar
1 tablespoon finely chopped red onion
½ teaspoon salt
½ teaspoon ground pepper
2 tablespoons Knolive Olive Oil
2 pints cherry tomatoes, halved
2 tablespoon chopped fresh basil
1 clove chopped garlic
DIRECTIONS:
- Whisk balsamic, salt, pepper, and olive oil in a medium bowl, until fully incorporated.
- Fold in tomatoes, basil. and garlic.
- Let stand, stirring occasionally, until the flavours come together, about 15 minutes.
- Serve at room temperature.
- Taste for salt and pepper.
