Tender Organic Scones


260g (1 cup) organic all purpose flour
120g (2/3) organic cane sugar
90g (6 tbsp) organic butter, cold
1 tbsp baking powder
1/4 tsp salt
3/4 cup (170ml) organic cream
90g organic chocolate chips / dried blueberries

  1. Preheat oven to 375F
  2. Place flour, sugar, baking powder, and salt in a large bowl or electric stand mixer. Mix until incorporated.
  3. Cube butter, add to flour mixture. Incorporate butter into flour until the mixture starts to resemble pea-sized crumbs.
  4. Mix in desired additions (chocolate chips or blueberries)
  5. With mixer running, slowly stream the heavy cream until dough comes together 
  6. Roll out scone dough into a rectangle, about 1/2” thick 5. Cut into 8 triangles. Try not to over-handle the dough, this will cause them to become dry and dense.
  7. Brush with heavy cream and sprinkle a pinch cinnamon and cane sugar on each scone.
  8. Bake at 375F for 13 minutes 
  9. Enjoy! 

*The colder the ingredients, the more tender your scones will be.
