Apple Pie Squares with Maple Glaze

Crust:

  • 2 cups (225g) organic all-purpose flour

  • 12 tbsp (130g) unsalted butter, cold and diced into cubes

  • ½ teaspoon salt

  • 1 egg yolk 

  • ¼ cup 2% milk (or water, if preferred)

Apple Filling:

  • 6 cups organic apples, peeled, cored, and diced – red & green mixed

  • 1 teaspoon vanilla extract

  • ½ cup (60g) organic all-purpose flour

  • ⅓ cup (68g) organic cane sugar

  • ½ cup (100g) brown sugar

  • 1½ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¼ teaspoon ground ginger 

Topping:

  • 1 egg white

  • 1½ tablespoons organic cane sugar 

  • ¼ teaspoon cinnamon

Glaze:

  • 2 Tablespoons (30g) unsalted butter

  • 1/3 cup (80ml) pure maple syrup

  • 1 cup (112g) sifted icing sugar

  • pinch of salt, to taste

Instructions

  1. Preheat oven to 350ºF.
  2. Pie crust: Add flour and salt to a food processor and pulse together. Add butter and pulse until mixture resembles pea-sized crumbs. Add milk and egg yolk (saving the white for later) and pulse until mixture forms into a ball. Press dough into a disk, wrap in plastic wrap and refrigerate while preparing filling.
  3. Apple Filling: Place prepared apples in a large bowl. Add vanilla and toss to coat. Add flour, sugars, and spices. Toss until evenly coated.
  4. Assemble: Divide pie crust dough into 2 equal portions. Roll first portion into a 13×9″ rectangle on a lightly floured surface. Transfer dough into the bottom of a non-greased 13×9″ baking dish. Carefully scoop apple filling over the crust and spread them up to ½” around the edge of the crust. Roll out the 2nd dough portion over top of the apple filling. Tuck sides of dough down into the baking dish, sealing the apples inside the crust. 
  5. In a small bowl, whisk the egg white until foamy and brush over top of the pie. 
  6. Sprinkle cinnamon and sugar evenly over pie. 
  7. Bake in preheated oven for 50-60 minutes until crust is golden brown. 
  8. Remove from oven and allow to cool before cutting. This will allow the filling to settle and the pie to keep together. 
  9. While the pie is cooling, in a small saucepan over low heat, melt the butter and maple syrup together. Once the butter has melted, remove from heat and whisk in the sifted icing sugar. Add a pinch of salt if desired. Allow glaze to cool for 10 minutes. Use a spoon to drizzle glaze over cooled apple pie squares.
